Happy St. Patrick’s Day – Recipe Time! My Silver Fox’s Cream of Broccoli With Carrot and Mushroom Soup



I know. This is random with a Capital R…but just hang ON.  Because you don’t even KNOW how incredible this soup is. We’ve been bonbarded with requests for the recipe (and invitations to dinner!), so what better way to get my talented personal Silver Fox Chef”s recipe out for all the world to try!?

Stephen’s Cream of Broccoli With Carrot and Mushroom Soup

Florets cut off from 3 medium sized broccoli crowns and a portion of upper stem peeled and diced

2 slices thick cut smoky bacon ½ inch diced

1 Tbs olive oil (or other cooking oil of choice)

1 medium shallot finely diced

3 cloves garlic finely diced or crushed through a garlic press

¼ tsp of ground chipotle or ground cayenne (more or less to taste)

1 teaspoon finely chopped fresh thyme leaves

2 Tbs dry white wine

3 medium carrots coarse shredded

2 ribs celery ¼ inch dice

½ lb. crimini mushrooms ½ inch dice

¼ cup all purpose flour

4 cups chicken or vegetable stock

2 bay leaves

1 cup cream (or ½ and ½ if you’re thinking lighter)

Salt and pepper to taste (added to each layer as ingredients are added)


Blanch broccoli in 4 quarts salted boiling water until just tender and bright green. Shock in ice water to cool quickly and retain color. Once broccoli has cooled, run through food processor until finely chopped, scraping bowl a couple of times to get uniform chop. Should resemble coarse wet sand.

Meanwhile, in stock pot, brown bacon over MED heat until crisp. Remove bacon with slotted spoon and drain on paper towel, leaving rendered fat in pan.

Add Tbs of olive oil to pan and then add garlic, shallot, thyme and chipotle. Cook until translucent, but not browned. Deglaze with wine.

Add carrots, celery and mushrooms. Cook until moisture is almost gone from mushrooms. Add flour gradually and cook stirring to combine well with veggies.

Pour in stock, add bay leaves, stir well and bring to boil until soup thickens slightly. Add chopped broccoli, stir thoroughly, then reduce heat to LOW, cover, and simmer for 20-30 min. Stir occasionally to prevent sticking to bottom.

Just before serving, add cream and stir until heated through.


Serving suggestion: Add dollop of sour cream in center of bowl and sprinkle with smoked paprika.

Kristin (L) and Hilary (R) – Beautiful Friends


My dear friend and colleague,  Hilary Sherpherd  has followed through with the promise she made several weeks ago and has shaved her head in honor of  someone very special to her.  I’ll let  Hilary tell the story in her words. First…the video of the process!  How perfect is it that David Bowie’s “CHANGES” was playing while Kristin did the honors of shaving Hilary’s head?

“On September 17, 2012, my friend Kristin, a 28-year-old wife and mother of two young daughters, was diagnosed with breast cancer. Upon hearing this news, there was only one thing I could think of doing… shaving my head! I don’t have money to help with medical bills, and I don’t live close enough to her to help with dinner or childcare, but I knew in my heart that I HAD to do something. So, I decided to shave my head.


All this hair was donated to Locks of Love by Hilary!


Head shaving doesn’t cost money, and it’s totally not permanent – you know, like losing a boob to cancer is; it was the least I could do. 




People are telling me I’m awesome, and how great of a friend I am, but all I really see is a need for love to be filled. I’m super-duper compassionate (a trait I learned from my parents and am extremely proud of), and I have tons of empathy for the struggles of my fellow human.

However, I am not the type of person to sit on a couch and cry. Life sucks – deal with it. Of course I have feelings, and I long for my friends and family to only know happiness. But when it comes to distress, I’m not always sure what to do; my natural reaction is to shake my fist at the Gods and curse the Universe. My shaved head is the result of such a reaction.

Hilary had most of Facebook  in tears of jubilation last night as we got a minute-by-minute update, and it was roundly decided that she was a badass for honoring Kristin this way.  She donated THIRTEEN INCHES of hair to Locks of Love--just an added act of  true beauty.

Kristin is a hero for coming out of the black hole of cancer like a true champion.  As such, our Song of the Day is David Bowie’s ‘HEROES’.

Cher and Kathy Griffin Have Some Something To Say About Republicans’ View On Women – Listen UP

Don’t Let Mitt Turn Back Towwwm.

If you people (and by “you people“, I mean YOU PEOPLE!) won’t listen to your mom or your best friend…at LEAST listen to Cher and Kathy Griffin discuss old white men wanting to get all up in a sister’s body.  Yeah. We don’t care for it all that much. Like, at all. And now we’re down to the wire.



So VOTE, gotdammit.  Should we really be voting on human rights for women in 2012?
